JAMERCREM
A substitute for cream and other fat solids for making mass-produced and artisanal ice cream.
- Dose: JAMERCREM has two possible well-differentiated applications:
1) As a fat content ENHANCER: 10 to 50 g per liter of mix.
2) As a SUBSTITUTE for cream: 200 to 300 g per kilo of cream.
If up to 50% of the cream is replaced, it is not necessary to rebalance the recipe’s fat solids. Added to the cooking process along with other solid components. - Presentation: 25 kg.
